large yellow onion, finely chopped

Heavy Cream

zucchini, grated

swiss cheese, grated
1 cup
freshly ground black pepper to taste

How to Make Zucchini Slice Lorraine

Preheat your oven to 375F. Line a baking pan with parchment paper. Grease with cooking spray and set aside.

Pour the oil into a skillet and heat over high. Sauté the bacon for 5 minutes until it begins to brown.

Stir in the onion and cook for 5 minutes more until the bacon is crispy and the onions have softened. Drain on a paper towel-lined plate.

In a large bowl, beat the eggs.

Whisk in the flour and baking soda.

Mix in the cream.

Add the cheese.

Fold in the zucchini.

Mix in the bacon, and onions.

Season with pepper, then transfer to the baking pan.

Bake for 25 minutes or until golden brown, then remove from oven.

Slice.
