Natural whole yogurt
250 grams
Granulated sugar
160 grams
Peanut seeds oil
60 ml
Milk

The yogurt plumcake is a soft breakfast dessert, with a delicate and delicious taste at the same time. It is a common preparation that everyone likes, perfect to be enjoyed naturally, soaked in milk, or with some jam or hazelnut cream. A really easy preparation to make your breakfast even tastier. How to prepare the yogurt plumcake

Collect the eggs in a clean bowl with the sugar, then whisk until you will obtain a light and frothy mass. Then add the yogurt, one jar at a time, and incorporate it well (1).

Also add milk and oil to the mixture dosed in a graduated jug (2).

Continue grating the most external and rich part of a lemon oil (3).

In a deep dish mix the flour with baking powder and salt. Then add the powders to the wet ingredients (4) and work with the whisk briefly until the dough appears smooth and silky.

Pour the dough into a plumcake mold lined with parchment paper (5).

Bake the plumcake in a preheated static oven at 180 degrees C for about 50 minutes, monitoring the browning level with the toothpick test. Then take it out of the oven (6), let it cool and take it out from the mold.

Let the yogurt plumcake cool on a wire rack and serve it in slices (7).

Tips

For this recipe we used whole white yogurt for a delicate taste, but if you want you can also use fruit yogurt – such as apricot or strawberry – to give a pleasant aroma to the dessert. If you love slightly less sweet flavors, you can also use Greek yogurt.

For a perfect result it is important that the yogurt and eggs are at room temperature, therefore put them out of the refrigerator for at least 3 hours before.

You can enrich the plumcake as you prefer, for example by adding the dried fruit you love most (almonds, walnuts, pine nuts, pistachios) or by adding dark chocolate flakes. Finally you can add an aroma of vanilla or cinnamon, to make the taste of your plumcake even more sweet.

Preservation

You can preserve your plumcake under a glass bell jar or well closed in an airtight container, in the refrigerator, for 2-3 days.
