This recipe is quite popular in the Vietnamese street food culture! It is an inexpensive dessert that can be found in most places and enjoyed by people of all age groups. Ripe banana is the perfect ingredient to get the final product with correct sweetness and texture.
In a bowl, add rice flour, white flour, baking powder, yellow color, salt, sugar, and mix it well. Pour water into the flour mixture and whisk it well until no lumps are present.
Let the batter rest for about 10 minutes. Peel and then cut the bananas half lengthwise. Heat the oil for frying. Now, dip each banana half into the batter and then fry it on both sides until light brown in color.
Repeat with the remaining bananas and batter. Serve hot and enjoy!
You can use ripe bananas to get the perfect balance of sweetness in this dish. However, do not use overly ripe bananas.
