The turkey tidbits with zucchini, raisins and pine nuts are a light and nutritious second course but equally satisfying and full of taste. The turkey meat, delicate, lean and particularly digestible, is cut into bite-sized pieces and then sautéed with zucchini, left slightly crunchy to enjoy all the fragrance, toasted pine nuts and dried raisins. A simple and refined alternative that has the advantage of being cooked in a single pan and limiting cooking time to a minimum. Perfect, therefore, for the summer season and for when you come home late after a busy day of work.

How to prepare turkey tidbits with zucchini, raisins and pine nuts

Cut the turkey breast into cubes about 2 cm 1.

Quickly pass them in the flour 2.

Wash the zucchini, trim them and cut them into cubes 3.

In a non-stick pan, toast the pine nuts until they are golden brown 4.

Soak the raisins in warm water for at least 15 minutes 5.

In a pan, heat a drizzle of oil, add the turkey tidbits and cook them over high heat until they are golden brown on all sides. Add the white wine and let it evaporate 6.
