Festive dates are approaching and the desired moments arrive where we enjoy the friends, the family and the delicious traditional recipes we have been waiting for all year. It is usual for the Christmas dinner to be served after midnight, so it is excellent idea to surprise and have for our little guests open mouths, like this rich ball of cheese, which takes no more than 20 minutes to make and that is always very well accepted (and devoured) by all; It does not need cooking and its ingredients are few and very easy to find, this, for these dates is great. You will not leave disappointed; it will be a wonderful aperitif that will be your ally forever.
Preheat the oven to 300 C, put the bacon on a baking sheet, and bake the bacon slices until crisp; Remove from oven and let stand until cold. Then with a sharp knife cut it into very small pieces. The peppers, bacon and almonds are the topping for the preparation. You can replace them with nuts, peanuts, pomegranate seeds or whatever you prefer.
With a hand grater, on the intermediate side grate all the cheddar cheese. Wash the peppers and cut them into pieces, as small as possible. Also chop the almonds into small pieces. In a large mixing bowl, combine the cheddar cheese with the cream cheese and knead until a homogeneous mixture is obtained.
Depending on how long you knead, and the heat of your hands, it will be possible to form the balls. In case the mixture is very soft you can refrigerate it for at least 15 minutes until it is manageable. With the hands divide the mixture into 9 portions, about the size of a peach approximately;
put the spheres on a plate and refrigerate for 15 minutes. In separate plates spread the pepper, the almonds and the chopped bacon. It should cover 3 spheres of pepper, 3 of bacon and 3 of almonds.
Roll each sphere through the corresponding plate until it is completely covered. Put the spheres in a serving tray and refrigerate for 20 more minutes or until serving.
