Tortang, the delicious Philippine eggplant omelette

Ingredients

Chinese eggplants
3 medium
eggs, beaten
3
olive oil for frying
4 Tbsp
salt and pepper to taste

Tortang Talong is the Philippine eggplant omelette. It is a simple Vegetarian (not Vegan, we use the eggs) meatless delicious dish. Perfect for breakfast or dinner and suits your budget.

You can serve it with fried rice or other garnish. Add some greens or ketchup sauce, if desire.

For preparing eggplants you can choose various methods ( grilling, roasted or broiling).We prefer grilling because it brings the character smoky flavour. You can also grillind the eggplant over the gas stowe. It is very easy.

Directions

Grill the eggplants  on your gas stove. Place the eggplant on the medium burner gas stove.When one side is charred, turn and start charing another side. Repeat until the eggplant has softened and skin turns almost black. Let them cool.Then peel off skin.

Gently flatten with a fork.

In a flatten bowl crack the eggs.

Whisk the eggs.

Add salt and pepper.

Dip eggplant in the egg mixture. Make sure that all sides are covered with egg mixture.

Heat the oil in a large skillet. Gently transfer the eggplant on it. Fry until golden brown. Spoon some of the beaten egg mixture on the top side just before flipping to brown the other side.

Transfer to a serving plate and enjoy!
