Tradition states that you leave skins on for baked potatoes, but peel them before boiling them. However according to research, it is better to be boil potatoes with their skin on.

This takes longer but will retain more nutrition and flavor. Peeled potatoes absorb more cooking water, and this reduces the fluffiness of the mash, leaving less room for them to absorb the butter and cream.

It is only advisable to peel potatoes before boiling when you’re trying to save time. Otherwise it is not worth losing all that fluffiness and nutrients.
