The delicious small fritters with aromatic herbs are simple and really quick to prepare, they are prepared with a dough made of flour, milk, eggs, brewer’s yeast and grated pecorino cheese to which a mince of fresh aromatic herbs is then added which, depending on the season and your preferences, can vary from time to time, for an always different and unique result. Finely chop all the aromatic herbs (1).
Also clean and coarsely chop the spring onions (2).
In a bowl, combine the flour, brewer’s yeast, aromatic herbs, spring onions and grated pecorino cheese (3).
Lightly salt, add the eggs (4) and the milk, mixing until a soft dough will be obtained.
Heat plenty of oil in a pan and, once ready, dip the dough with the help of two spoons; you will need to get fritters the size of a walnut (5). Fry the dough until golden brown.
When the fritters are slightly crunchy, drain and let them dry on absorbent kitchen paper (6).
Transfer them to a serving dish, season with a pinch of salt and serve very hot (7).
