The Only Muffin Recipe You Will Ever Need (And How to Add Variations!)

Muffins are easy to bake and makes a great snack. What makes them so good is the endless list of variations, giving them always different tastes and colors. But who wants to remember 10 different recipes? No one. So instead, commit this one basic recipe to memory, and have fun with different variations!

The Basic Muffin Recipe

Preheat your oven to 350°C (180°C). Coat a 12-hole muffin pan evenly with non-stick spray. You can also add muffin liners. In a medium bowl, sift 240 g cake flour, 1 Tbsp baking powder, and ¼ tsp salt. Add in 100 g sugar and your variation ingredient (see below), and mix well.

In another bowl, whisk 1 egg, ½ tsp vanilla extract, 1 cup milk, and 3 Tbsp melted butter. Add this mixture to the dry ingredients, and stir until thoroughly combined.

Fill the muffin holes with the batter and bake for 20-25 min.

Bran

Bran muffins can sometimes get a bad rap, but we think they’re delicious. They also make a convenient healthy snack (they’re filled with fiber!), and is great to pack in with your kid’s lunches. To make bran muffins, simply add 30 g of wheat bran as your variation ingredient. Fill 12 muffin holes with the batter and bake for 20-25 min.

Poppy seed and Lemon

The nuttiness from poppy seeds combined with fruity lemon, makes for an irresistible muffin. Use 75 g poppy seed as your variation ingredient and bake. In the meanwhile, make a lemon syrup. In a medium saucepan, add the ½ cup water, 200 g sugar, and 2 Tbsp lemon juice. Bring to a boil while stirring, making sure all the sugar dissolves. Fill 10 muffin holes with the batter and bake for 20-25 min. Pour the lemon syrup over the hot muffins when they come out of the oven.

Apple and Cinnamon

A classic duo, and they make a great match for muffins. As your additional variation, mix 3 apples (peeled and chopped), with 25 g sugar and 1 tsp cinnamon. Continue with the recipe, but just before placing the muffins in the oven, you can add a thin apple slice on top. Fill 9 muffin holes with the batter and bake for 20-25 min.

Blueberry

Make your basic muffin mix, and use 180 g blueberries as your variation. You can sprinkle a bit of sugar on top of the muffins before baking them. Fill 9 muffin holes with the batter and bake for 20-25 min.

Chocolate Chip

Make your basic muffin mix, but add 1 cup chocolate chips as your additional variation. Fill 9 muffin holes with the batter and bake for 20-25 min. Also try it with bananas!

Coconut

Make your basic muffin mix, and 120 g desiccated coconut as your additional variation. Fill 9 muffin holes with the batter and sprinkle a small amount of coconut on top. Bake for 20-25 min.

Dulce de leche

Make your basic muffin mix, without any added variation. Fill 9 muffin holes halfway with the batter and add 2 tsp dulce de leche to each. Top up with the remaining batter and bake for 15 – 20 min.
