Coconut milk
1 cup
Peanut butter
1/3 cup crunchy
Soy sauce
2 tablespoons
Honey
2 tablespoons
rice wine vinegar
1 tablespoon
ginger, peeled and grated
1 teaspoon
garlic, peeled and grated
4 cloves
Chicken breasts
2 skinless and boneless , cut into 1” cubes
Lime juice
1 tablespoon
Cornstarch
½ tablespoon mixed with 1 tablespoon water
Spring onion greens
1 tablespoon , thinly sliced

You can serve a thicker (non-gravy) version of this dish for a snack or prepare a slightly saucy version by adding some water and enjoy it with plain boiled rice. Instructions

In a non-stick pan, add the coconut milk, crunchy peanut butter, soy sauce, honey, vinegar, ginger, garlic, and cook on low flame.

Add the chicken cubes to it and cook everything on a medium flame for 4 to 5 minutes or until the chicken cooks. Add lime juice and cornstarch slurry to it and cook until the mixture thickens to the desired consistency. Serve hot with sliced green onions and enjoy!

Tips

You can adjust the consistency of the dish as per your requirements. You can also replace the crunchy peanut butter with the creamy version.
