How to Make Cottage Cookies

In a bowl, beat the butter with the cottage cheese and egg yolks until combined.

Add the flour, baking powder, and salt to the butter mixture, and mix until a smooth dough forms. Allow it to rest for 10 minutes.

Roll the dough into a thin layer. Cut it into circles and dip the circles in sugar.

Fold each circle in half and then in half again. Place them on a baking sheet. Bake them in a 180 C/360 F oven for 25 minutes.
