This recipe is just what you need to take everyday baked potatoes and meatballs from blah to brilliant.

Stuffed Potatoes Ingredients

  • Potatoes – for best results, use Yukon Golds, red potatoes, or russet potatoes—these will give you the fluffiest potatoes with a crispy texture.
  • Minced meat – use ground beef, turkey, or chicken
  • Seasoning – for this recipe, we used salt and pepper
  • Cheese – use cheddar or swiss cheese

Tips

To make the meatballs equally sized, use a small ice cream scoop.

If you use frozen meatballs, you will need to increase the cooking time.

For juicy meatballs, don’t overmix the ground beef and seasoning. This will result in tough meatballs. Mix until just combined.

You can also use ground turkey and chicken instead of beef.

The meatballs are ready when the internal temperature reaches internal temperature reaches 165°F.

If you prefer, you can also leave the potato skins on. Just make sure to wash the potatoes with a vegetable brush before use.

For added flavor, you can use other spices like fajita or taco seasoning, Italian seasoning, or Cajun spice instead of salt and pepper.

Want to make these potatoes even meatier? Add crispy bacon bits or smoked chicken pieces to the potatoes at the same time you add the cheese.

If you prefer a bit of heat, you can add freshly sliced chilies.

How to Store Stuffed Potatoes

Store leftovers in an airtight container (in the fridge) for up to 3 days.

Can I Make Stuffed Potatoes in the Airfryer?

Assemble the dish in an 8-inch baking tin (or any tin that will fit in your model Airfryer) and spray it with oil. Bake for 20 minutes at 180°C / 350°F.

Can I Make It Ahead of Time?

Because of the potatoes, this dish is best served immediately when it comes out of the oven. Upon reheating, the potatoes will become grainy.

What To Serve With Stuffed Potatoes

These Stuffed Potatoes are a meal on their own. If you want, you can serve it alongside a green salad.
