In a large coffee mug (sprayed with non-stick spray), combine 3 Tbsp vegetable oil, 3 Tbsp yoghurt, 1 tsp vanilla extract, 1 egg, and ½ tsp red food coloring. Mix thoroughly with a fork. Add in ¼ cup flour, ¼ cup sugar, 1/8 tsp baking powder, 1 ½ Tbsp cacao powder, and a pinch of salt. Mix thoroughly with a fork until it looks like thick cake batter. Microwave for about 50 seconds until the cake begins pulling away from the sides of the mug. Cover with cream cheese frosting.
All the cooking times stated are applicable to the HIGH setting on your microwave. Make sure to check your mug cake carefully while in the microwave. If you overcook it, it will become spongy or rubbery.
