How to Store Ice Cream Sandwiches

Store the ice cream sandwiches in an airtight container in the freezer for up to a month.

Strawberry jam
120g (4.2 oz)
Strawberry Syrup
160g (5.2 oz)
Coconut flour
70g (1 cup)
Liquid cream
200ml (1 cup) + 700ml (3 cups)
Chocolate sprinkles
90g (1/2 cup)
Chocolate biscuits

How To Make Ice Cream Sandwiches

In a small bowl, combine the strawberry jam and syrup.

In another bowl, mix the coconut flour and liquid cream until a thick batter forms.

Whip the liquid cream in a mixing bowl with an electric mixer until it forms peaks. Gently fold in the coconut batter.

Add the strawberry mixture and mix through.

Finally, fold in the, and chocolate sprinkles.

Arrange half of the cookies on the bottom of a baking tin, in an alternating pattern.

Spread the cream mixture over the cookies.
