These Strawberry Cake Mix Cookies are all you want in a cookie. They’re soft and chewy, and the coolest pink color! White chocolate chips are added that adds a pop of white to the pink cookies. To make these cookies, you only need a handful of ingredients.
– One box strawberry Cake Mix (it usually comes in 15 oz boxes).
– Eggs – use large eggs for this recipe.
– Vegetable oil – you can also use butter, but using oil will make the cookie last longer.
– White chocolate chips – the white chocolate chips will look good with the pink cookies instead of the normal dark chocolate chips. It also adds extra sweetness.
These cookies are made all in one bowl. The cake mix is first mixed together with the baking powder. Then the other ingredients (except the white chocolate chips) are added and mixed until a batter forms. Finally, the chocolate chips are stirred through. An ice cream scoop is used to drop balls of batter on a baking sheet, and it’s then baked until cooked through, but still soft and chewy.

In a large bowl mix, add the strawberry cake mix and baking powder.
Add the remaining ingredients.
Whisk.
Add chocolate chips and carefully mix with rubber spatula.

Bake for 9-10 minutes at 350°F/180°C.

The cookie dough balls can be prepared in advance and stored in the fridge for up to 5 days. You can also freeze the cookie dough balls and bake them directly from frozen, just make sure to increase the baking time by 5 minutes.
The finished Strawberry Cake Mix Cookies can be frozen. Place the baked cookies on a baking tray and add them to the freezer. Once frozen, transfer them to a sealable bag and place them in the freezer again. Thaw them at room temperature and reheat in the microwave or oven.
