What are Spiral Sausage & Pastry Sticks?

While the exact origin and inventor of Spiral Sausage & Pastry Sticks are unknown, they likely stem from a combination of culinary traditions. These are bite-sized snacks or appetizers featuring savory sausage encased in a golden brown pastry dough. They are often enjoyed with dipping sauces like mustard or ketchup.

Spiral sausages themselves might be inspired by spiral-cut hot dogs, a popular street food in various cultures. The use of pastry dough for savory fillings is a common theme across European cuisine, with dishes like pigs in a blanket and sausage rolls being close cousins. Similar treats exist worldwide, with variations in sausage type, dough preparation, and cooking methods.  In Central Europe, there are "spiralki" – sausages wrapped in puff pastry and baked.  South America has "pastelitos" – fried or baked turnovers filled with various ingredients, including sausage.

Tips

  • While classic hot dogs work well, experiment with different flavors like spicy chorizo, Italian sausage, or even breakfast sausage for a sweet and savory twist.
  • Don't have a spiralizer? No problem! Simply cut the sausage lengthwise, leaving one end intact, and then wind it around a skewer to create a spiral.
  • Don’t feel like making your own dough? Use store-bought puff pastry or shortcrust pastry instead.
  • Brush the pastry dough with an egg wash before baking to create a beautiful golden brown finish.
  • For a classic fried pastry experience, heat oil to around 350°F (175°C) and fry the sausage spirals until golden brown. For a lighter option, bake the pastry sticks at 400°F (200°C) for 15-20 minutes, or until the pastry is puffed and golden brown.
  • Offer a variety of dipping sauces like mustard, ketchup, BBQ sauce, or even a creamy horseradish sauce.
  • Before baking, sprinkle the pastry sticks with sesame seeds, everything bagel seasoning, or even chopped fresh herbs for an extra pop of flavor and visual interest.

160ml (3/5 cup)
Flour
250g (1 1/2 cups)
dried yeast
4 g
Sugar
4g (1 tsp)
salt
6g (1 tsp)

How To Make Spiral Sausage Sticks

In a bowl, combine warm water, sugar, and yeast. Let this mixture sit for 5-10 minutes, or until it becomes foamy.

Once the yeast is activated, stir in flour and salt.

Knead the dough until it becomes smooth and elastic.  Cover the bowl and let the dough rise in a warm place for 2 hours, until doubled in size.

Once the dough has risen, divide it into 8 equally-sized pieces.

Roll the dough into a long thin rope.

Stick a skewer through the sausage.

Using a sharp knife, carefully cut the sausage diagonally from end to end, leaving one end attached. This will create a long, spiral shape.

Stretch out the sausage into a long, thin spiral. Wind it around a skewer in a spiral pattern.

Gently wrap the pastry dough around the sausage spiral, pressing it firmly to secure it and seal any spaces between the sausage coils.

Heat oil in a pan or deep fryer to the desired temperature (around 350°F). Lower the sausage spirals into the hot oil.

Fry the spirals for 3 minutes per side, or until golden brown and cooked through.

Serve the sausage spirals are a great appetizer or snack.
