Spanish rice bake it practically a one pot dish that can be a part of your on the go meal pack. This is a very flavorful rice preparation that has the typical tomatoey tang and cheese crust to make your everyday meal turn in to a surprise.
You do not even need to prepare a separate gravy or a side dish to serve it. This ease of serving in preparation makes it a very handy dish to be served to children who create all sorts of fuss while eating food.
For adults, top it with some salsa and sour cream to make it visually appealing. For grown-ups you may turn it in to a fancy meal by placing a nicely cooked and juicy slab of meat on top of Spanish rice bake.
Stir in chopped onion, capsicum, tomatoes to the mutton and let it cook for 5 to 10 minutes until the tomato softens. Add the white rice, red chili sauce, salt, brown sugar, cumin powder, Worcestershire sauce and black pepper powder to the pan and stir everything for 2 minutes.
Pour the water to the pan and cook everything on simmer for 15 minutes while stirring intermittently. Preheat the oven to 175 degrees C. Transfer this half cooked preparation to a large baking dish and sprinkle grated cheddar evenly on top of the rice.
Transfer the baking casserole in to the preheated oven and bake it for about 10 to 12 minutes or until the cheese starts to melt and turn golden brown in color. Garnish the rice with fresh coriander leaves, serve hot and enjoy!
You may replace mutton with beef or chicken mince as well. Presoak the rice for about ½ an hour to reduce the cooking time of this preparation.
