Snowball cookies are soft and delicious pastries made with almond flour as a main ingredient. White and very tender, just like snowflakes, they will practically melt in your mouth. They are very easy to make: melt the butter, mix it with sugar and flours, then form some small balls and bake them. Once baked, sprinkle them with a little powdered sugar and enjoy them hot and fragrant at breakfast or snack time, together with a cup of tea or an herbal tea. Cut the butter into cubes and collect them in a bowl. Add the granulated sugar (1) and work with a whisk until light and fluffy.

In another bowl, mix the flours with the vanillin (2).

Pour the flour mix into the butter-based mixture (3) and knead with your hands until you get a smooth and homogeneous ball.

Take walnut-sized balls from the dough and roll them up with your hands (4). Gradually transfer them to a baking tray, lined with a sheet of parchment paper, and cook at 180 degrees C for 10 minutes.

After the cooking time will be elapsed, take the cookies out of the oven and let them cool, then roll them in the powdered sugar (5). Once completely cold, pass them a second time in the powdered sugar.
