Chicken cooked to perfection is smothered in delicious gravy. This recipe is ideal for busy weekends or working days and when you need some comfort food. The recipe is inspired by Southern cuisine and is bursting in flavors. The chicken is seasoned with some seriously good spice mix, while the gravy is made with onions, chicken stock, and heavy cream. You can serve this alone, but it pairs wonderfully with rice, or potato wedges. Of course you can play with the flavors, and try out some other spice mix, but this one is a WIN. This is a quick and comforting diner or lunch that requires so little of your active time. The oven will do the rest.
In a small bowl, combine paprika, chili, basil, and garlic powder.
Place the chicken into a bowl.
Sprinkle a few pinches of spice mix, and salt and pepper, to taste.
In a large bowl, combine the rest of the spices with flour.
Coat the chicken with the flour mix.
Heat some oil in a skillet over medium-high heat.
Cook chicken in the skillet for 5 minutes per side.
Place aside. Remove the chicken from the skillet.
Add onion and cook for 5 minutes.
Add in 2-3 tbsp of the flour mix and cook for 3-4 minutes.
Pour in the chicken stock and cook for 1 minute.
Add heavy cream and butter and cook for 1 minute.
Heat oven to 350F/180C. Place the chicken in a baking dish.
Pour the gravy over the chicken.
Bake the chicken for 1 hour. Serve warm.
