Savory rice pancakes are the best for making a delicious appetizer: a really simple and anti-waste preparation that will allow you, in fact, to use even the leftover rice. Simply put the cooked rice in a little oil and then add the beaten eggs with the flour, some milk, chopped herbs and grated Parmesan cheese. Once the dough is ready, shape it with your hands and fry in plenty of boiling oil. Your rice pancakes are ready to be served hot as an appetizer, or cold for a picnic or a buffet, maybe in a mini format.
If you do not have boiled rice, cook it in salted water. Once cooked, pour it in a bowl with olive oil and let it cool. (1) Meanwhile beat the eggs with the flour and a little salt, mix well with a whisk to avoid the formation of lumps.
Add the chopped chives and parsley and mix well. Add the rice mixture with the grated Parmesan cheese and milk. Mix all the ingredients and leave it for at least a quarter of an hour covering the mixture with a cloth or with a wrapping film.
After the necessary time has passed, heat the seeds oil and pour the mixture into the pan helping yourself with two tablespoons: once in a pan lightly crush your pancakes (2) and cook for about 4 minutes, or until browned, turning a couple of times.
Once ready, lift them with a skimmer and lay them on the absorbent paper. Let them cool slightly and serve warm. Your savory rice pancakes are ready to be tasted. (3)
In our recipe we have used chives and parsley, but you can flavor your rice pancakes with the herbs you prefer: thyme, sage, marjoram or those you have at home.
Remember to cook the rice pancakes in boiling oil: this will form a crispy crust that will preserve all the softness and taste of the inside part.
You can then replace the Parmesan cheese with other aged cheeses, or make a mix with different cheeses to give even more flavor to the pancakes.
For a lighter recipe you can prepare the savory rice pancakes in the oven: cook at 180 degrees for about 25-30 minutes or until browned.
If you love special flavors, and you want to add a touch of scent to your savory rice pancakes, you can add to the ingredients some curry or paprika.
