Savory lady's kisses are an appetizing variant of the famous hazelnut biscuits typical of the Piedmontese gastronomic tradition, in particular of the city of Tortona. These are delicious shortbread biscuits flavored with parmesan cheese, filled with a delicate cheese cream and scented with chopped chives. Simple and very quick to prepare, the lady’s kisses are perfect to serve as a delicious appetizer, on the occasion of a special dinner or a more informal meeting, or to enrich your buffets, especially during the festive period. A refined and very greedy idea, which will leave guests speechless. So let’s find out how to prepare them by following our recipe step by step.
Combine the type 00 flour and the almond flour in a bowl; add the soft butter in chunks (1) and a pinch of salt.
Mix everything with a fork until you will get a sandy mixture (2).
Add the grated parmesan cheese (3) and then the dry white wine.
Work the mixture quickly with your hands, without heating it too much (4).
Remove some pieces from the dough of about 10 grams each, form some small balls (5) and place them in a pan, lined with parchment paper; you will get about 34 lady’s kisses. Bake the small balls at 180 degrees C and cook for about 25 minutes, putting the dripping pan on the lowest shelf of the oven. Remove the small balls from the oven and let them cool.
In a bowl, mix the fresh cheese with the chopped chives, a pinch of salt and a sprinkle of pepper until you will obtain a smooth cream (6).
Using a spoon, spread a bit of cheese cream on the flattest part of a ball (7).
Place another ball on top, always placing it on the flat side, and press lightly to achieve the lady's kiss (8). Continue in this way until all ingredients will be used up.
Transfer the savory lady's kisses on a plate and serve (9).
Savory lady's kisses can be preserved in the refrigerator for 2-3 days, closed in a special airtight container.
