Why not try something a little different for a weekday dinner? This sausage, potato, and arugula (rocket) roast is so easy to prep and cook – just add the ingredients to a baking sheet and pop in the oven. One dish dinners are great because there’s no fiddling around, and the added bonus is that there’s no extra washing up!
Herby sausages and new potatoes with onions or shallots cook together to make an aromatic and hearty dish, which is then tossed with arugula and served. Divine!
Heat oven to 425F/200C fan/gas mark 7.
On a large, rimmed baking sheet, toss all of the potatoes with 3 tablespoons olive oil, salt (around 1 teaspoon) and a lot freshly ground black pepper, or red pepper flakes to taste.

Put in the oven and roast for 15 minutes, by then they’ll be just beginning to color.
Give them a mix round, and add onions and sausages.
On a large, rimmed baking sheet, toss all of the potatoes with 3 tablespoons olive oil, salt (around 1 teaspoon) and a lot freshly ground black pepper, or red pepper flakes to taste.
Brush the top with a little olive oil and return the tray to the oven for another 30 to 40 minutes, or until the potatoes are tender and the sausage is cooked through.
To serve: Transfer everything on the tray to a big bowl and add arugula, lemon juice, and more salt and pepper to taste. Toss together or serve on the bed of arugula, and serve right away.
* I used herby Lincolnshire sausages instead of Italian ones, and they worked brilliantly in this dish.
