Collect the bread and almonds in a kitchen mixer (1) then blend everything until chopped.
Transfer the mixture into a bowl, add the egg white (2) and mix well.
Add thinly sliced onion (3), and mix carefully until you will get a slightly sticky dough.
Clean the salmon fillet by removing any residual bones (4). Rinse it and pat it dry with absorbent kitchen paper.
Place the salmon fillet into a pan suitable for baking in the oven, lightly greased with a drizzle of oil, and season with a pinch of salt and pepper (5).
Sprinkle the salmon fillet with the breading mixture (6) and bake at 180°C for 12-13 minutes.
When the cooking time is up, take the salmon and almond gratin out of the oven and serve it very hot (7).
