Sacher truffles are soft, no-bake and delicious cocoa desserts, inspired by the famous Sachertorte, a typical Austrian cake. They are prepared in a few minutes, with just 3 ingredients, without butter and they do not require any baking (just a quick rest in the refrigerator).
With a creamy and melt-in consistency, they are perfect to serve as a delicious after-meal, to serve together with a good espresso, or to satisfy those sudden cravings for sweet on a hot summer afternoon.
You can flavor the dough as you prefer by adding a little grated orange zest, which goes very well with chocolate, the seeds of a vanilla bean, a pinch of cinnamon powder or a drop of rum.
If you don't have dry cocoa biscuits in your pantry, you can replace them with classic shortbread biscuits for breakfast and add one or two tablespoons of unsweetened cocoa powder.
You can replace apricot jam with any flavor of jam you want: cherries, peaches, or bitter oranges.
For an exotic version, roll your small truffles in unsweetened cocoa powder, mixed with a little grated coconut. You can also try with chopped almonds or hazelnuts.
Sacher truffles can be stored in the refrigerator, wrapped on the surface with a sheet of cling film, for about 3-4 days.
Collect the dry biscuits in a kitchen mixer and grind them into a fine powder. Add the apricot jam (1) and mix the ingredients well.
Shape the mixture into small balls (2).
Pass each ball in the cocoa powder (3). Transfer the truffles to a serving dish and let them cool in the refrigerator for about 1 hour.
After the resting time, transfer the truffles to the dessert plates and enjoy (4).
