Roasted cod with olives is an easy main dish recipe you will love. Similar to classic baked cod recipe, you can assemble and bake it in less than 30 minutes. You just have to pile up cod, lemon slices, basil and black olives, season and pop the dish in to the hot oven.

Preheat the oven to 175 degrees C. Clean the fish fillet with water and pat dry the fillets using a paper towel.
Arrange the thin lemon slices evenly in an oven proof baking dish. Place the fresh basil leaves over evenly sprinkle dried rosemary.
Scatter the whole black olives all over the baking dish.
Place the cod fillets gently over the bed of vegetable and herbs. Evenly drizzle olive oil over the fish fillet and season it with salt and black pepper powder.
Bake for about 15 to 20 minutes or until the fish cooks thoroughly. Serve hot and enjoy!
