To cut the cauliflower, put it stem-side down on a cutting board. Take a sharpened knife and cut it in half down the middle. Cut each steak about ¾ inch thick. Any leftovers can be also be roasted.
Don't overdo it with the oil – you want just enough to coat the steaks without them becoming saturated.
Experiment with different seasonings. Old Bay, Creole, jerk, and fresh herbs also go beautifully with cauliflower steaks.
