Rice cream is a very simple and quick to make recipe. An ancient recipe, prepared all over the world that adults and children like for its simplicity and its soft and creamy taste. A perfect dessert for a quick snack or for a relax moment with friends. It is perfect served with flakes of chocolate, cinnamon or fresh fruit, the result is still guaranteed!
To prepare the rice cream, start by pouring the milk into a pan, add a cinnamon stick and lemon zest or orange zest to flavor it and cook until it boils.
Rinse the rice so that it loses some of its floury part. Pour the rice and sugar into the boiling milk, stirring with a whisk to prevent lumps. Cook for about 10 minutes, making sure that the rice does not stick to the bottom of the pan and that at the same time it absorbs the milk when cooking.
When your cream is thick and creamy, remove from heat, let it rest for a few minutes and finally pour the mixture into single-portion molds, cover with cling film and let it rest in the refrigerator for about 2 hours. Serve with a sprinkle of cinnamon, cocoa powder or fresh fruit. Decorate with a mint leaf.
– You can replace rice with rice flour that you can buy in any supermarket, the dessert will be even creamier. In this case, consider 100 grams of rice flour for 250cl of milk.
– Brown rice can also be used for this recipe. However, in this case use 2 liters of milk for 200 grams of rice because brown rice takes longer to cook.
– For an even creamier and sweet taste you can use honey, in this case we advise you to add it after the rice has cooked for at least 10 minutes in boiling milk, always be careful and mix with a whisk to avoid lumps.
– For a vegan variant you can use soy milk.
– You can also use your rice cream to fill pies or pastry cakes.
