Recipe Alert: Jill Biden’s Parmesan Chicken Is Perfect For Family Gatherings

Joe and Jill Biden have been married many decades and one of their family dynamics is never neglecting to spend bonding time together with their family. A few years ago, Jill revealed that one of their most favorite gatherings is around a dining table for Sunday dinners. And their favorite menu item is this hearty parmesan chicken recipe!

Jill Biden shared the recipe for a magazine interview a few years ago but that doesn't make it any less exceptional!

To prepare, you'll need the following ingredients:

2 tablespoons extra virgin olive oil, plus more for frying

1 onion, finely chopped6 cloves garlic

6 14 ounce cans of cherry tomatoes

1 bunch  fresh basil, roughly choppedsalt and pepper

3 eggs

1/4 cup milk

3 cups seasoned Italian breadcrumbs

1 1/2 cups grated Parmesan

4 cups grated Mozzarella

5 pounds skinless, boneless chicken breasts, pounded

1/4-inch thick

Note: These ingredients make for 12 servings

Procedure:

1. Preheat the oven and prepare your ingredients:

First, preheat your oven to 350 degrees. Then, heat 2 tbsp. oil in a large pot over medium heat. Add the chopped onion and garlic and let it cook for 5 minutes. Again, add 2 cans of tomatoes. Strain the remaining 4 cans; add the tomatoes to the pot. Using a wooden spoon, break up some of the tomatoes; simmer for 20 minutes. Turn off the heat, discard the garlic and add the basil; season.

2. Coat the chicken in the egg mixture

Whisk the eggs and milk in a shallow bowl and set aside. In another large bowl, mix the breadcrumbs with 1/2 cup each Parmesan and Mozzarella. Coat the chicken in the egg mixture, and give it a second coating in the breadcrumbs.

3.  Cook the chicken

Heat 2 tablespoons of oil over medium heat in a large skillet. Cook the chicken in batches for about 5 minutes or until they're golden on both sides. Drain on paper towels.

4. Bake the chicken

Finally, transfer the chicken to a sizable baking dish. First pour the sauce into the dish, then the chicken and remaining 312 cups mozzarella, then a final layer of sauce. Top with the remaining 1 cup of parmesan and bake until the cheese is melted, 20 minutes.

Note: the final step of layering is very important as it aids optimum absorption of the flavors into the chicken.

For a hearty meal, serve this dish with pasta, salads, or even your favorite artisan bread!
