Boil the potatoes to make the puree. I prefer to cook the potatoes whole with skin, previously washed, so it does not absorb a lot of liquid. Peel the potatoes, cut into slices of intermediate size and mash with a fork. Add two tablespoons of liquid milk and a teaspoon of butter.
Stir until a smooth and homogeneous mixture is obtained. You can also use a dehydrated puree pack and follow the instructions. Chop the bacon into small pieces and put in a pan over medium-high heat until golden brown. It is not necessary to add oil. Chop the onion, green onion and coriander into very small pieces. To the mashed potatoes, add the beaten egg, the pieces of bacon, half a cup of cheddar cheese, the onion, the green onion, the garlic powder and the coriander.
Add salt and pepper to taste and mix very well. Prepare the tray of muffins or cupcakes, rub with butter, you can put it in paper capsules or directly in the molds. Divide the mixture with a spoon.
Bake for 15 minutes at 200F. Remove from the oven and add the rest of the cheese, bake for five more minutes until the muffins are golden brown.
