Think you’ve tasted potato in all its forms yet? Think again! These Potato bombs are a delicious way to use up leftover mashed potatoes. The dough is made with mashed potatoes, semolina, cheese, and egg. Once shaped into disks, it’s topped with ham and cheese, and fried until golden and crispy. It’s easy to customize the recipe according to the ingredients you have on hand, so make sure you check out our tasty tips below! They make a great appetizer or snack and can be served with a dipping sauce of your choice.  Easy to make and so tasty, they are perfect for a quick snack!

Tips

For extra fluffy Potato Bombs, mash the potato with a potato ricer. Don’t use a food processor, this will over-process them and make them gluey. Alternatively, you can grate the cooked potatoes with the large holes of a box grater.

Don’t make your oil too hot, otherwise, the Potato Bombs will brown too quickly before the cheese has melted. Use a thermometer to heat the oil to about 350°F. Don’t overcrowd the pan, as this might cool the oil down too quickly.

For added creaminess, add a teaspoon of cream cheese to each fritter, together with the ham and cheese.

For a vegetarian variation, sauté mushrooms and allow them to cool. Mix with a bit of fresh thyme, and use it for a filling, together with the cheese.

How to Store Potato Bombs

Keep the leftover Potato Bombs in the fridge for up to 3 days. Reheat them in the air fryer or oven (for crispiness). You can reheat them in the microwave, but they won’t stay as crispy.

Can I Make Potato Bombs in the Airfryer?

Yes, you can make these fritters in the Airfryer. Place them in the Airfryer basket, and spray liberally with cooking oil. Cook for 15 minutes at 400°F/200°C, turning halfway, until golden and crispy.

Can I Make It Ahead of Time?

The Potato Bombs are best served fresh, while they’re hot and crispy.  While cooking them, you can keep them warm in the oven at 200°F (100°C). You can also make the dough, cut out the disks, and assemble them ahead of time, then fry just before serving.

What To Serve with Potato Bombs

Serve these yummy Potato Bombs with your favorite sauce. It will work with ketchup, sweet chili sauce, mayonnaise, BBQ sauce, or Ranch dressing.

Instructions

Bring water to a boil, add the potatoes, and cook until soft.

Mash the potatoes, and add semolina, cheese, salt, pepper, parsley, baking powder and egg.

Mix the ingredients until combined.

Knead the dough, then wrap it with plastic wrap and cool for 15 minutes.

Roll out the dough with a thin layer, then press out disks with a diameter of 10 cm.

Brush the dough disks with water, then top with ham and cheese.

There are two ways to close the disks. For a half-moon shape, fold the disk in half, sealing it with a bit of water. For a round shape, place another disk on top of the filled disk, sealing it with a bit of water.

Fry the fritters in hot oil until golden and cooked through.
