Creamy, sweet popsicles are the perfect dessert for summer. These pistachio popsicles are great for days when you want something cool and refreshing while giving a homemade feel. They’re easy to make, and you don’t need a lot of ingredients: condensed milk, pistachio cream, whipped cream, and chocolate.

Make the popsicle ice cream base. Add the whipped cream, condensed milk, and pistachio cream into the food processor, and blend until smooth. Pour the ice cream mixture carefully into an ice popsicle mold. Add the popsicle sticks, close the mold, and freeze until solid (about 4 to 5 hours).
Meanwhile, melt the chocolate over a double boiler. You can also use a microwave, and microwave the chocolate in 30-second increments until melted. Once the popsicles are frozen solid, gently remove the ice cream from the mold.
Dip the frozen popsicles in the melted white chocolate. Pour some of the white chocolate into a piping bag and drizzle over the popsicles. Sprinkle with crushed pistachios and serve.
For a coconut flavor, use coconut cream. Or combine the pineapple with ½ cup Greek yogurt, 1/3 cup coconut milk, and ½ tsp vanilla extract.
You can use fruit juice instead of whipped cream, but the popsicles with be more icy than creamy.
If you won’t have a popsicle mold, you can also use plastic cups.
