The pistachio cheesecake is a fresh, creamy and very simple cake to make;  it can be prepared in a few minutes, it does not need to be baked and after a few hours of resting in the refrigerator it is ready to be decorated and enjoyed. The base is prepared with biscuits and melted butter and contains a voluptuous and delicious pistachio filling. Finely garnished with cream and dried fruit grains, it is the ideal dessert for any occasion; from a birthday party or anniversary party to lunch or dinner with friends, as a refined finish, it is always the winning choice. Here's how to prepare our pistachio cheesecake perfectly, and in the best way.

How to prepare pistachio cheesecake

For the base: chop the biscuits and collect them in a bowl; pour the melted butter 1 and mix well.

Pour the mixture of biscuits and butter into a 20 cm diameter springform mold and compact well with the help of a spoon 2. Transfer to the refrigerator and let it compact for at least half an hour.

Put the gelatine sheets to soak in cold water; once soft, squeeze it, melt it and then add it to the yogurt. Whip the cream with the powdered sugar in a bowl, then add the yogurt and mix gently 3.

Add the pistachio cream 4 and mix gently with a spatula to avoid breaking the mixture.

Pour the cream into the mold 5, carefully level and let it rest in the refrigerator for at least one night.

After the resting time has elapsed, unmold the cake, taking care to gently remove it from the edges of the pan with a small knife. Collect the pistachio cream for decoration in a pastry bag and decorate the surface of the cake as desired 6.
