If you are looking for a particular and tasty dessert, you can not miss our pirouette cookies. Also known as "Parizske Pecivo", "Cigarettes Russes" or "Cigar cookies", this recipe is very versatile and well appreciated because its batter is similar to the pancake one. You just need to roll them such as a pirouette in ballet dancing. This recipe is so popular that every country has different names, for example Italians call them "Pizzelle".
Pirouette cookies are the perfect dessert to serve during a party because they are dainty and a little crunch. We recommend to fill them with ricotta cheese cream for an exploding flavor, but you can choose also sweetened whipped cream, mousses or ice cream. Everyone loves these rolled wafer, especially children as they see them as a tasty sweet easy to eat!
For the cream; sift the ricotta cheese through a fine mesh strainer (1).
Add cinnamon powder and powdered sugar (2), then mix well. Cover and transfer to the refrigerator.
For the dough; sift the flour and the corn starch (3), collecting them in a bowl. Keep them aside.
Beat the egg whites until stiff peaks, incorporating the powdered sugar a little at a time (4).
Add the butter (5) and continue mixing.
Add the grated orange zest and then the flours (6), then mix gently with a spatula being careful not to break the mixture.
Transfer the dough into a pastry bag and make 3 strips on a baking sheet lined with parchment paper (7).
With the help of a spatula, roll out the dough evenly and create rectangles of 10 × 5 cm (8). Make the other rectangles, until the dough is finished, and bake in a static oven at 180 degrees C for 4-5 minutes.
Once cooked, take the wafers out of the oven and roll them while still hot with the help of a wooden skewer (9).
With a pastry bag with a narrow point nozzle, stuff the cigarettes with the ricotta cheese cream (10).
Sprinkle the cigarettes with bitter cocoa powder and powdered sugar and serve (11).
Pirouette Cookies can be preserved for 3-4 days in the refrigerator, closed in a special airtight container.
