These delicious pineapple pastries are made of puff pastry, marmalade, pineapple and hazelnuts. They make a great afternoon sweet treat, but they can also be enjoyed in a birthday buffet or as a dinner dessert – great if paired with a scoop of ice-cream.

The recipe is quite simple: just fill the squared puff pastry sheets with marmalade, hazelnut grain and pineapple, fold them into the shape of a flower, add a hazelnut in the center and bake. See below all the steps to bake these delicious pineapple pastries.

Tips

You can garnish the pastries with your favorite jam or opt for some delicious custard.

You can also add a maraschino cherry instead of a hazelnut in the center, or dust with shredded coconut.

You can make the puff pastry and the marmalade at home, or you can buy them in a store.

You can slice a fresh pineapple or use the candied one.

Ingredients

Puff pastry
1 sheet
Pineapple
6 slices
Hazelnuts
6
Orange marmalade to taste
hazelnut grain
Brown sugar
powdered sugar, for decorating

How to make Pineapple Pastries

Unroll the puff pastry sheet.

Cut the sheet into 6 squares.

With a knife, score each corner of each square of puff pastry.

Spread the orange marmalade in the centre of each square, sprinkle with hazelnut grain and place a slice of pineapple on top.

Fold the scored corners towards the centre of each square and pin them with a hazelnut, to create a flower.

Place the pastries on a tray lined with parchment paper and decorate with more hazelnut grain and brown sugar.

Preheat the oven and bake the pineapple pastries at 180°C / 350°F for 20 minutes or until golden brown. Remove from the oven and let it cool for a few minutes.

The pineapple pastries are now ready to be served! Let cool and dust with powdered sugar to decorate.
