Peasant chicken is a typical dish of the tradition with a savory and succulent flavor. In our recipe we have chosen to use the thighs, which are particularly soft and pulpy. These thighs are cooked in a pan together with aromatic herbs, potatoes, peas and very little tomato puree, for a colorful and fragrant result; a joy for all the senses. This is a very simple recipe, which you can also prepare in advance; you just need to heat it only at the last moment and serve it as a main course or single dish suitable for the whole family. So let’s find out how to prepare the peasant chicken by following our recipe step by step.
Flame the chicken to remove any hair, then rinse it and dry it. In a saucepan, heat 2-3 tablespoons of oil with the rosemary; add the chicken (1), and then add salt and pepper, and brown well over high heat.
Peel and dice the potatoes (2). Clean and wash the vegetables; slice the onion and carrots. Remove the filaments from the celery and cut it into chunks; chop the garlic clove.
Add the vegetables and garlic in the saucepan (3) and let flavor for about 5 minutes.
Add the potatoes (4) and then sprinkle with a little hot broth, if necessary.
Pour the peas (5) and mix everything delicately; cover with a lid and cook for about 5 minutes, then pour the tomato puree, slightly diluted with the hot broth, and continue cooking for about twenty minutes.
When the sauce has shrunk and the chicken is soft, remove from heat and serve immediately (6).
Peasant chicken can be preserved in the refrigerator, closed in a special airtight container, for 1-2 days.
