Pea burgers are a healthy and easy-to-prepare vegetarian main course. Delicious vegetable burgers, ideal to serve with a side dish of salad or grilled vegetables or to taste with burger buns, as a single dish. They are excellent both hot and cold, perfect also for the lunch break in the office or for a picnic. In our recipe we will make the dough with peas, potatoes, egg, breadcrumbs, grated parmesan cheese, curry and parsley. The pea burgers will then be cooked in a pan with a bit of oil or in the oven, for an even lighter preparation. So let’s see how to make them in a few steps.
Boil the potatoes in abundant boiling and lightly salted water until they have softened. Once ready, peel them and mash them with the potato masher (1). Brown the chopped onion in a pan with a bit of oil (2). Also add the peas, half a glass of water and cook for about ten minutes; add the salt almost at the end of cooking (3).
Put the peas in a large bowl, removing the excess water, and let them cool. Also add the potatoes, the egg, the curry, the grated Parmesan cheese, the parsley, the chilli pepper and the salt, then mix all the ingredients well (4): add a spoonful of breadcrumbs if the mixture is too soft. Shape your burgers with your hands and cook them in a pan on both sides with a bit of oil (5). Your pea burgers are ready to serve (6).
You can also enrich pea burgers with the addition of chickpeas, carrots or spinach. You can also replace parsley with mint, thyme or basil. If you don't have fresh peas available, you can also use frozen peas in the same quantity.
Alternatively, you can prepare pea burgers in the oven: place them on a baking tray lined with parchment paper, brush them with extra virgin olive oil and bake at 190 degrees C for about 20 minutes.
If you want to make vegan pea burgers, just make them without eggs and grated Parmesan cheese: mix together potatoes, peas, breadcrumbs, salt, pepper, aromatic herbs and spices. Once you have prepared your burgers, bake them in the oven at 200 degrees C for half an hour, turning them halfway through cooking.

You can preserve the pea burgers in the refrigerator for 1-2 days in a hermetically sealed container. The mixture can be prepared in advance, maybe in the morning, and stored covered by a tea-towel in the refrigerator.
