Oven Roasted Radicchio is a simple and tasty side dish, ideal to accompany meat or fish main courses, but also fresh and creamy cheeses to complete with a few slices of warm and freshly toasted bread. An easy and economical recipe, excellent for any family lunch or dinner with friends.

For our preparation we used the radicchio from Chioggia, a winter vegetable which is characterized by its rounded head, crunchy consistency and sweet but slightly bitter flavor. Here it is cut into wedges, arranged in a baking dish, seasoned with extra virgin olive oil, grated parmesan, salt and pepper, then baked in the oven until it is golden brown on the surface.

The result is a tasty and very appetizing dish, which can also be enriched with a drop of balsamic vinegar or a drizzle of honey, which goes well with the bitter aftertaste of radicchio.

800 grams

4-5 tbsp
Grated Parmesan
30 grams
Sea salt

How to Make Oven Roasted Radicchio

Cut the radicchio into several wedges. To tone down the bitter aftertaste, you can soak it in water seasoned with vinegar or lemon juice, for half an hour.

Wash it well, and then drain it.

Place it on a tea towel to remove excess water.

Place the radicchio on a baking tray lined with a sheet of parchment paper.

Place it so that it does not overlap.

Season with a generous drizzle of oil.

Sprinkle with grated parmesan cheese.

Season with a pinch of salt.

Then add a pinch of pepper. Roast in a preheated oven at 350°F/180°C for about 15 minutes.

Remove the radicchio from the oven when it is still not golden on the surface.
