The orange crumble cake is a simple and delicious tart, the seasonal and citrus-scented variant of the pear crumble cake. A very crumbly shortcrust pastry shell, lightly compacted with your hands, contains a super creamy and fragrant orange cream. Sprinkled on the surface with many small crumbs of dough, it is baked in the oven and then garnished with a pinch of powdered sugar, for an irresistible result that will literally melt in your mouth. So let’s find out how to make orange crumble cake by following our recipe step by step and enjoy it for breakfast, as a snack or at the end of a festive lunch.

How to make Orange Crumble Cake

Make the dough. Put the flour in a bowl, sifted and mixed with the baking yeast and salt. Add the sugar, the cubed butter and then the eggs (1).

Start kneading with your fingertips, until you get large crumbs (2).

Spread two thirds of the dough into the pan, compacting it carefully (3). Transfer everything to the refrigerator and let it rest for at least half an hour.

Make the cream. In a saucepan collect the corn starch and the granulated sugar. Pour the orange juice (4) and mix carefully.

Put the saucepan on the stove and cook, stirring constantly, until thickened (5). Remove and let cool.

When the cream is very cold, pour it into the shortcrust pastry shell and level well (6).

Sprinkle with the crumbs of the remaining dough (7) and bake at 180 degrees C for about 40 minutes, or in any case until the pastry is golden brown.

After the cooking time has elapsed, take the cake out of the oven and let it cool. Sprinkle it with a little powdered sugar and serve (8).

Tips

– We recommend using a 20 centimeters diameter mold, preferably hinged and with a removable bottom; in this case it will be easier to take out the cake.

– If you like, you can also scent the dough with grated orange zest or a pinch of vanilla or cinnamon powder. If you use citrus peel, be careful to buy organic and chemically untreated fruits.

– You can also replace the classic oranges with bitter ones (in this case slightly increase the amount of sugar) or with lemons. You can also fill your cake with a ricotta cheese and strawberry cream or with a vanilla cream.

– Once cold, you can add dark chocolate chips. For an even more crunchy and tasty result, you can sprinkle the surface with almonds, roughly chopped with a knife.
