Onion Potatoes: the easy recipe to make a delicious side dish

Potatoes (like Maris Piper)
1.8 lb (800 g)
Onion
14 oz (400 g)
Olive oil
1.25 tbsp (20 ml) 
Unsalted butter
1.75 oz (50 g)

If you’re tired of plain old potato side dishes, then why not try these onion potatoes instead?

Crispy fried onions are mixed through tender pieces of boiled potatoes and coated with melted butter. The onions really add a new taste dimension, and this dish would go well with most meat dishes, fish, or poultry.

Instructions

Peel the potatoes. Cut into smaller cubes and put them into salted water to cook. Cook until soft, around 15-20 minutes.

About 5 minutes before the potatoes are due to finish cooking, start preparing the onion.

Peel the onion and chop it coarsely. Heat the olive oil in a skillet, and add the onion.

Cook gently in olive oil, until they are soft and caramelized.  Gently melt the butter in the pan while the onion is cooking. When the buttery onion is done, add to the potatoes, stir up, and serve.
