A frittata is an egg-based dish, similar to an omelet, but usually a bit thicker. You can also liken it to a crustless quiche. It’s a very versatile dish, and the number of recipes for a frittata is almost endless! It can be made with various meats, cheeses, or vegetables. This Onion Bread Frittata is enriched with bread cubed and onion. It makes a protein-rich, satisfying meal—perfect for a main dish or hearty breakfast.

The taste reminisces of French Onion Soup and is tender on the inside with a crispy outside! All you need is stale bread, red onions, eggs, cheese, and seasoning. Pour the eggs on top of sliced onion, add cheese and bread, and cook. As easy as that. Serve warm or at room temperature with a side salad.

Onion Bread Frittata Ingredients

Bread – stale bread works best for this recipe, but if you’re in a pinch, you can use fresh bread too.

Onions – red onions are sweeter than white onions and lend a wonderful flavor to the frittata.

Eggs – the eggs form the base of the frittata.

Cheese – use mature cheddar for added flavor.

Seasoning – salt and dried parsley are used, but you can also use other dried herbs.

Tips

For a lighter frittata, add a bit of milk or water to the eggs.

If you want the onions to taste sweeter, you can caramelize them beforehand.

To caramelize onions, heat 2 tbsp olive in a large pan over medium heat. Add 3 red onions (sliced), and a pinch of salt, and cook for about 40 minutes. Stir the onions every now and then to prevent the onions from catching on the bottom. Add 2 tbsp balsamic vinegar and 2 tbsp brown sugar and continue to cook for 5 minutes.

How To Store Onion Bread Frittata

Store frittata leftovers in an airtight container, in the fridge, for up to 5 days.

If you want to make it ahead of time, you can slice the onions and keep them in the fridge. If you’re using caramelized onions, you can store them in the fridge for up to 3 days. You can also freeze the onions for up to 3 months.

How To Make Onion Bread Frittata

Soak the bread in water for a few seconds, the chop it roughly.

Mix chopped bread with olive oil and parsley.

In another bowl mix together eggs with salt.

Slice the onions into thin slices.

Drizzle a bit of oil in a pan over medium heat, then add a layer of onions.

Top with the whisked egg mixture.

Sprinkle with the shredded cheese.

Top with bread pieces and press it down with a spatula. Cover and cook over low heat for about 5 minutes.

Turn it over and cook for a few minutes more.
