Did you know you can prepare delicious sugar cookies without butter? This is an easy, dairy-free recipe to make using a different fatty ingredient. You can prepare perfect sugar cookies using oil instead of butter – as we did.
With soft centers and crisp edges, butterless sugar cookies are lighter than classic sugar cookies, although they still have a buttery-texture.
Butter is an ingredient that is often used to make soft and crumbly cookies. Anyway, you can also substitute butter if you don't have it on hand or you're looking for a dairy replacement because of allergies or vegan diets. When substituting butter for oil remember that you can't use a precise 1:1 ratio. The two ingredients have different texture, so it is better to calculate a 20% less amount of oil – about 3/4 cup of oil for every cup of butter.

If you want to make sugar cookies without butter, keep in mind there are many butter substitutes that work the same way as oil. You can try margarine, shortening, coconut oil, applesauce or even Greek yogurt.
For a vegan version of these sugar cookies, replace the egg with a flax egg or mix together 1 tablespoon of chia seeds with 3 tablespoons of water.

The sugar cookies without butter will keep at room temperature for 15 days, closed in an airtight container.
Preheat the oven to 170°C. Line a baking tray with parchment paper.
In a bowl, mix the oil with the sugar, add an egg previously beaten with the vanilla extract.
In another bowl, add the sifted flour, baking powder, salt. Next, add in this mixture to the wet ingredients. Mix until incorporated.
Scoop the dough onto the baking tray. Bake the cookies for about 12 minutes.
Remove the tray from the oven. Let the no butter sugar cookies cool for 3 to 5 minutes, then transfer them to a cooling rack to cool completely. Serve and enjoy!
