What do you do if you have a serious craving for chocolate brownies, but don’t have an oven? You make this recipe for No-Bake Brownies!  With only five ingredients, you can easily whip up a batch of ooey, gooey chocolate brownies without ever switching on the oven! To make it, you will need almond butter, honey, cocoa powder, milk chocolate, and cream. Simply mix together the first three ingredients, top with a ganache made from chocolate and cream, and refrigerate to set. As easy as that. They’re fudgy, moist, and dense in the middle, with a dark, shiny top.  What are you waiting for?

No-Bake Brownies Ingredients

  • Almond butter – can be replaced with macadamia butter or peanut butter.
  • Honey – can be substituted with maple syrup
  • Cocoa Powder – use natural, unsweetened cocoa powder
  • Milk chocolate – used for the ganache, can be substituted with other chocolate (see tips below)
  • Cream – use full-fat cream

How to Make No-Bake Brownies

Make the brownie batter first. In a bowl, mix together almond butter, honey, and cocoa powder to create a thick batter.

Now make the ganache. In another small bowl, mix together the chocolate chips and hot cream until the chocolate chips have melted, and the ganache is smooth.

Press the brownie into the mold, then top with the ganache.

Set in the refrigerator, then slice and serve.

No-Bake Brownie Variations

Want to make no-bake brownie balls instead? Once you mix the dough, roll it into small balls. Place the balls on a sheet lined with wax paper, then drizzle with melted chocolate. Leave to set in the fridge.

Nuts, crushed cookies, chocolate chips, dried cranberries, or freeze-dried raspberries can be folded into the butter.

Tips

This recipe uses natural, unsweetened cocoa powder. But if you prefer a richer, darker color, you can use Dutch-processed cocoa.

Make sure to use natural nut butter with no added oils. Otherwise, the brownies won’t set.

If you prefer not to top the brownies with a ganache, you can also make a quick frosting. Simply mix together 2 tbsp melted coconut oil, 2 tbsp honey, and ¼ cup cocoa powder.

The milk chocolate can be substituted with white chocolate (if you prefer sweeter brownies), or dark chocolate (if you prefer them less sweet).

Spray a large knife with cooking spray before cutting—this will prevent the brownies from sticking to the knife.

How to Store No-Bake Brownies

Store the brownies in the fridge, in an airtight container, for up to 2 weeks.

Ingredients

Brownie batter
almond butter
250g (1 cup)
Honey
170g (1/2 cup)
Cocoa powder
70g (2/3 cup)
ganache
Milk chocolate
100 g
cream, heated
50ml (1/5 cup)

Instructions

In a bowl, mix together almond butter, honey, and cocoa powder.

In another small bowl, mix together the chocolate chips and cream until melted.

Transfer the chocolate batter to a glass mold greased with butter and lined with parchment paper.

Use a wooden spoon to press the batter into the mold.

Pour the chocolate ganache over the batter.

Refrigerate for two hours to set, then remove the parchment paper.

Slice and serve.
