Have you ever craved lasagna, but it looked like way too much work to cook for a single person? Well, that no longer needs to be an issue. This is far easier and quicker than classic lasagna. Why? Because you make lasagna in a mug, in the microwave! Yes, you read that right. No need to slave for hours behind the stove if it’s only yourself you’re cooking for. This Microwave Lasagna in a Mug is just the right recipe for you.
It’s also easy to customize the recipe. To make it, you only need lasagna sheets, tomato sauce, ricotta cheese, parmesan, and mozzarella. Simply spread ricotta between the layers of lasagna, and roll it up. You then add it to a cup with tomato sauce and cheese. Bake until the cheese has melted and the cheese is gooey. It’s ready to serve and enjoy!
If you don’t have ricotta cheese, you can use cream cheese (plain or flavored), or simply spread extra tomato sauce between the layers.
Use any tomato-based sauce like marinara or pizza sauce (plain or flavored), or if you’re in a pinch, you can also use ketchup!
Optional extras: Uncooked spinach, Cooked bacon, Cooked sausage, Salami, Chopped onion, Red, green, or yellow bell peppers, Fresh chopped garlic, Freshly basil
If you’re using dry lasagna sheets, you can break them into smaller pieces and mix them with the other ingredients.
To make this keto-friendly, you’ll need to make keto noodles. Do this by mixing 2 eggs, 2 oz of cream cheese, ¼ cup grated Parmesan, herbs and seasoning, and 1 ¼ cups mozzarella, and spreading it on a baking sheet lined with parchment paper. Bake for 20 minutes until golden and use the recipe.
Store leftover mug lasagna in the fridge (either in an airtight container or wrapped with plastic wrap) for up to 4 days. Reheat in the microwave.
Mix ricotta with salt, pepper, Italian herbs, and parmesan.
Lay 2 lasagna sheets together and cover with half of the cheese mixture. Add two lasagna sheets on top, add leftover ricotta.
Top with two lasagna sheets and roll them together.
Pour ¼ cup of tomato sauce on the bottom of the mug. Add ¼ cup of mozzarella.
Put the lasagna roll on the tomato sauce and cheese mixture.
Top with the remaining sauce.
Top with more cheese and microwave on HIGH for 2-3 minutes.
Flip over the cup to serve the pasta.
You can also bake the mini lasagnas in the oven at 350°F for about 10 minutes. This is also a better way if you want to make several mug lasagnas to serve a large group. You can also make individual lasagna cups in a muffin tin if you’re looking to do more than one.
