These bite-sized pancakes are easy to make, and they're always a hit with kids and adults alike. Plus, there are so many different ways to serve them! You can stack them up and drizzle them with maple syrup, top them with fresh fruit and whipped cream, or even turn them drizzle them with hazelnut cream. To make mini pancakes you only need a few ingredients, including flour, sugar, baking powder, salt, oil, milk, eggs, and honey. Simply mix the ingredients together and bake in a pan—it’s as easy as that.

Don’t feel like making your own batter? Use pancake mix for a quick shortcut.

Try to make your pancakes all one size, as this will ensure even cooking. A squeeze bottle or piping bag will also work for this if you don’t have a funnel.

Don’t overmix the batter, rather have it a bit lumpy. Overmixing the pancake will result in a flat, dense pancake.

Why not make pancake cereal? Pipe smaller amounts of batter into a hot pan (about ½-inch in diameter) and cook until crisp. Serve with whole milk or flavored milk.

Use a spatula to flip the pancakes. If you use a fork, you will pierce through the pancakes and they won’t be light and puffy.

Work in a non-stick pan for best results. Because the pancakes are small, you don’t want them to stick to the bottom of the pan!

Keep an eye on the heat of your pan. You can start it off at medium heat, but medium-low is better to ensure that the pancakes don’t burn.

The size of the pancakes will determine the crispiness. If you like them crispy, then go for smaller pancakes!

The Mini Pancakes are best served and enjoyed immediately, but they can be made up to 2 hours in advance. Leftovers can be stored in the fridge for up to 3 days, in an airtight container.

Can I Freeze Mini Pancakes

Yes, you can! Place the mini pancakes in a single layer on a baking sheet lined with parchment paper. Freeze for two hours, then transfer to a plastic bag and freeze for up to 3 months. Reheat in the microwave for 10-15 seconds.

What To Serve With Mini Pancakes

Serve the mini pancakes with a drizzle of hazelnut cream (like Nutella), dulce de leche, blueberry compote or strawberry preserves, or golden syrup.

For breakfast, these pancakes taste great with a dash of cream and honey. They can also be eaten warm, with melted butter and maple syrup.

For dessert, enjoy with a scoop of ice cream and chocolate sauce.

Use any toppings you like: fresh berries, chocolate chips, chopped fruit, nuts, etc.

Instructions

Mix the eggs, sugar, honey, olive oil, milk, lemon juice, and vanilla sugar in a bowl.

Add the flour and baking powder and stir to combine.

Grease a pan with a bit of oil and pour the batter into a funnel.

Use the funnel to pour the mixture little by little to form several mini pancakes.

Once bubbles start to appear, carefully flip over the pancakes and cook until golden on both sides.

Drizzle with hazelnut cream to serve.
