These are the Essential Tips for Making the Best Lolly Cake

Lolly cake can take between one and two hours to set in the fridge. If you want it to set more quickly, just pop it in the freezer for about 20 to 25 minutes.

For folks outside of New Zealand, you can use any soft, chewy candy to make a lolly cake. Marshmallows are a great option.

If you can't find malt biscuits (aka cookies), try digestive biscuits, graham crackers, shortbread, Biscoff, or Nila wafers. Get the classic malt flavor by adding malt powder to the mixture.

Not big on coconut? Feel free to leave it out of the recipe.

soft chewy candy such as Explorers or mini marshmallows, chopped

How to Make Lolly Cake

Pour shredded coconut onto a plate. Set aside.

Place the butter and condensed milk in a microwave-safe bowl.

Heat in 20-second intervals until the butter melts.

In a bowl, add the crushed biscuits and candies.

Pour in the melted butter mixture. Mix well.

Turn out the mixture onto a clean surface. Shape into two equal-sized logs. Roll each log through the coconut. Wrap each log in plastic wrap, then place in the fridge to set for one to two hours.

Remove the logs from the refrigerator and cut into 1-inch slices.
