Lazy to make dinner? Rotisserie Chicken 5 Ways!

We all have those days when we just don’t feel like cooking. But getting fast food is not always the best option, especially if you’re trying to eat more healthily! Luckily, there are many alternatives to unhealthy junk food. Chances are that a store near you sells fresh rotisserie chicken. And with a cooked chicken in your kitchen, you can do many things! Read on and be inspired!

Chicken is one of the most versatile meats. Roast it, grill it, poached it… the possibilities are endless! And when it comes to cooked chicken, there are just as many options. Next time you’re in a rush to make dinner, grab one on the way home. With most of the cooking done for you, you’re halfway there to a delicious dinner in minutes!

Chicken salad

Sure, you can make a plain chicken salad with shredded chicken, tomatoes, and a few salad leaves. But why not take it up a notch? Here are a few interesting variations:

Keto Chicken Salad: Combine shredded chicken, arugula (rocket), bacon, and cherry tomatoes. Drizzle with a high-fat avocado dressing. Simply blitz the following in a food processor: juice from one lemon, 2 Tbsp olive oil, 1 avocado, salt and pepper.

Fall Flavors:  Combine chopped chicken, green onions, pecans, and cranberries. Make a dressing by mixing mayonnaise, sour cream, honey, Dijon mustard, and poppy seeds.

Southwestern Salad: Combine shredded chicken, romaine lettuce, corn, black beans, tomatoes, avocado, red onion, and crushed tortilla chips. Top with a flavorful dressing: simply combine ½ cup plain yoghurt, 3 Tbsp olive oil, 2 tsp honey, 2 tsp apple cider vinegar, and 2 tsp taco seasoning.

Chicken Casserole

A casserole can easily be made if the chicken is already cooked. It’s the perfect comfort food for cooler months. Why not make a quick Chicken & Corn Casserole? Simply combine 3 cups rotisserie chicken (shredded), one can creamed corn, 2 cups cheddar cheese, ½ cup cream, and spring onions. Cover with breadcrumbs and bake at 220°C/425°F for about 20 min.

Chicken Pot Pie

Keep phyllo pastry in your freezer. This way you can easily whip up a Chicken Pot Pie in no time.  Simply sauté onion and make a white sauce (bechamel). Add 3 cups of the rotisserie chicken and 2 ½ cups frozen vegetables (mixed). Spoon into ovenproof dishes, and place a sheet of pastry over the dish. Bake at 220°C/425°F for 10 min until the pastry is golden brown.

Who doesn’t love pasta? With cooked pasta and a rotisserie chicken, you can make a different pasta for almost every day of the week.

Green Pasta: Combine shredded rotisserie chicken, cooked fusilli pasta, basil pesto, and parmesan.

Quick, fresh, and delicious!

Red Pasta: Combine shredded rotisserie chicken, cooked penne pasta, romesco sauce, sundried tomatoes, and parmesan. This pasta is chock full of vitamins!

Creamy Chicken and Veggie Pasta: Combine shredded rotisserie chicken, white sauce, and mixed frozen vegetables. Warm up until the veggies are heated through and cooked. Serve with fettucine.

Keep a few frozen pizza bases in your freezer and be ready for the weekends. For a BBQ Chicken Pizza, top the pizza bases with shredded rotisserie chicken, bacon, smoky BBQ sauce, and mozzarella. Or try something different by making a fruity pizza. Top the pizza bases with chicken, fresh peach slices, and Gorgonzola cheese. Top with a balsamic reduction and enjoy!

There’s no need to reach for fast food again. Simply buy a fresh rotisserie chicken and get creative!
