Kiwi Cake: the recipe for a soft and light dessert

This kiwi cake is a soft, no butter dessert that is ideally served as a light and healthy afternoon snack or enjoyed at breakfast with a glass of warm milk. The recipe can be quite handy for you to get rid of all the ripe fruit you might have at home, and it is suitable also for those following a balanced and healthy diet, who however go crazy for a tasty slice of cake.

The preparation of the kiwi cake is a piece of cake. You will only need a bowl, a hand mixer and a few simple ingredients. Once the eggs have been beaten together with the sugar, you should only incorporate the flour, baking powder, seed oil and kiwis, which you will have blended into a puree with a mixer.

The mixture will then be poured into a cake mold, garnished with sliced kiwis and then baked: the result will be a soft, slightly caramelized dessert which will be sprinkled with icing sugar and enjoyed as a well-deserved after dinner treat.

How to store Kiwi Cake

You can store the kiwi cake at room temperature, under a glass bell, for up to 4 days.

Brown sugar
120 g (1 cup)
Seed oil
100 g (1 cup)
Milk
100 g (1 cup)

16 g (3 tsp)

How to make Kiwi Cake

Peel the kiwis and dice of them. Put in the mixer and reduce to a puree.

Slice the remaining kiwis in rounds and put aside for later.

Break the eggs in a bowl and add brown sugar. Mix with a hand mixer until fluffy, and combined.

Sift the flour in the mixture.

Add the baking powder.

Fold in the dry ingredients and mix with a spatula.

Add the milk at room temperature.

Fold in the seed oil and keep mixing.

Add the blended kiwis. and mix thoroughly with a spatula.

Once the mixture is smooth, grease a cake mold (20 cm in diameter) and pour in the mixture, then spread it evenly.

Decorate the top with the sliced kiwis set aside at the beginning.

Preheat a static oven at 180°C / 360°F and bake for 45 minutes. Once ready, remove the cake from the oven and let it cool for a couple of minutes.

Transfer the cake on a serving dish, dust with icing sugar and serve.
