Jam filled pastries are the super greedy variant of the classic Mardi Gras fritters. The dough is rolled out into a thin sheet, stuffed with a delicious jam and then packaged in the shape of a ravioli. Fried in boiling peanut seeds oil and then generously sprinkled with abundant powdered sugar, they turn into a fragrant delicacy with a soft and surprising heart. Simple and quick, they are perfect to prepare together with your children and to be enjoyed as a snack or served at the end of a festive lunch. How to make Jam Filled Pastries

First prepare the dough; collect the flour in the bowl of a planetary mixer, then add a pinch of salt and pour in the eggs (1).

Let the butter soften at room temperature for a few minutes and add it to the other ingredients; continue with the granulated sugar (2).

Pour in cold milk (3) and then grappa.

Flavor with the peel of ½ grated lemon (4), turn on the planetary mixer and mix well.

When the dough is soft and elastic, form a ball (5), wrap it in cling film and let it rest in the refrigerator for about 30 minutes.

After the resting time will be elapsed, divide the dough into smaller portions and roll them out on a floured pastry board, with the help of a rolling pin, until you will get about 4 mm thick sheets (6).

Spread some jam on the pastry with a teaspoon, spacing them a few centimeters from each other (7).

Fold the dough back on itself and with your hands unite the two edges, letting the air escape from the dough (8).

Cut out many squares with a pastry wheel (9). Heat abundant peanut seeds oil in a pot, then dip the jam filled pastries and fry them for a few minutes, turning them from time to time.

When the raspberry jam filled pastries are slightly swollen and golden, drain and let them dry on a sheet of absorbent kitchen paper. Finally, sprinkle them with plenty of powdered sugar and serve hot (10).
