Italian egg sandwich is a savory and easy breakfast recipe that you can make it even on one of those weekly busy mornings. Instructions

– Finely chop the tomatoes and the arugula, then season with olive oil, salt and pepper.

– In a small bowl, crack one egg at a time and gently pour it into a saucepan with boiling water. Then swirl the egg with a spoon until the white and the yolk unite. Turn off, wait few minutes and remove the egg with slotted spoon.

– Lightly grease with olive oil a skillet and toast your sandwich.
