Cook the eggs, scraping the sides and bottom of the pan with a spatula until the eggs scramble.

Add the grated cheddar.

Add the salt, chopped tomato, and spinach. Stir until cooked through.

Scoop the egg mixture out in a large bowl, and place the ham slices on a wooden board.

Notes
